FRIED fish (char hu) is a popular breakfast meal in Alor Star. It seems to refer to a unique style of cooking in which seafood is doused in dark soy sauce and fried till aromatic. The dishes are eaten with rice. Orders of sek pan, catfish, crab, squid and prawns arrive quickly with bowls of steamed soup and rice.

The dark sauce here combines preserved soybean (taucheo), tamarind juice, dark soy sauce and chopped ginger and garlic. It is used for all the dishes but magically, each dish tastes completely different from the next!

The squid has a garlicky flavour while the crab is redolent of dried prawns. The catfish is simply superb. The place is very busy, especially on weekends.
